The method mainly utilizes the high-voltage pulse electric field to extract the black rice anthocyanin, and has the advantages of simple steps, convenient operation and strong practicability. The anthocyanin content in the anthocyanin extract is higher than 20% (calculated by cyanidin-3-glucoside); the degradation kinetic stability (P is less than 0.05) of anthocyanin monomers (cyanidin-3-glucoside and paeoniflorin-3-glucoside) is higher than that of the traditional mode. |
