abstract | The invention discloses a compound clostridium sporogenes spore inhibitor, belonging to the field of bacteriostatic agents. The compound clostridium sporogenes spore inhibitor is a mixed solution of ɛ -polylysine hydrochloride, potassium cinnamate, chitosan and lauric acid monoglyceride; the ɛ -polylysine hydrochloride is 0.007-0.020% by mass, the potassium cinnamate is 0.018-0.030% by mass, the chitosan is 0.058-0.073% by mass, and the lauric acid monoglyceride is 0.040-0.051% by mass. ɛ -polylysine hydrochloride, potassium cinnamate, chitosan and GML have obvious synergistic effect on the inhibition of spore germination of clostridium sporogenes. The natural compound bacteriostatic agent of the invention achieves or even exceeds the function of nitrite in inhibiting germination of spores of clostridium sporogenes, and can completely replace nitrite to be applied to storage of pork and other meat products. |
