abstract | The invention provides a preparation method of a lotus seed starch-protein compound, which comprises the following steps: dissolving lotus seed starch in an acid solution, adding amylase to perform enzymolysis reaction for 24-48 h, adjusting the system to be alkaline, centrifuging to remove supernatant to obtain precipitate, washing the precipitate to remove supernatant, drying and crushing to obtain lotus seed porous starch; mixing phospholipid and lotus seed porous starch, and then carrying out microwave-ultrasonic combined treatment for 16-20 min to obtain a rough lotus seed porous starch-phospholipid compound; mixing protein, crude lotus seed porous starch-phospholipid composite and water, performing ultra-high pressure treatment, centrifuging to remove supernatant to obtain wet lotus seed starch-protein composite, drying the wet lotus seed starch-protein composite to constant weight, pulverizing, and sieving to obtain the final product. The invention can prepare the lotus seed starch-tea polyphenol compound with high compound index. |
