abstract | The invention relates to resveratrol-loaded W/O/W emulsion and a preparation method thereof. The resveratrol-loaded W/O/W emulsion comprises the following components in percentage by mass: resveratrol 0.00032% -0.00064%; 0.5% -2.2% of lipophilic emulsifier; 10% -19% of lipid material; 1.5 to 8 percent of hydrophilic emulsifier; a proper amount of water. The emulsion has good stability, can not be layered after being placed at 4 ℃ for 2 months, and can not be layered under the conditions of high-speed centrifugation at 4000r/min and 30 min. In addition, the emulsion loads resveratrol in the oil phase and the internal water phase simultaneously, and the encapsulation rate is up to 99%, so that the content of the loaded resveratrol can be obviously improved. |
