abstract | An object of the present invention is to provide a powdered fat and oil which contains a high proportion of medium-chain fatty acid triglycerides, is excellent in solubility and fluidity, and has little oil slick when dissolved. The present invention provides a powdered oil and fat comprising medium-chain fatty acid triglycerides, an octenylsuccinic acid-treated starch mixture and dextrin, wherein the above-mentioned octenylsuccinic acid-treated starch mixture contains a 10 mass % aqueous solution with insufficient viscosity at 25° C. The viscosity of the first octenylsuccinic acid-treated starch at 30 mPa·s and the 10 mass % aqueous solution at 25° C. is 30 mPa·s or more.
