abstract | A method for producing a hydrolysate is disclosed, the method comprising: (a) mixing at least one protein or a portion thereof with: (A) at least one endoprotease; and (B) (a' ) at least one proline-tolerant tripeptidyl peptidase or a fermentation comprising a proline-tolerant tripeptidyl peptidase having predominantly exopeptidase activity, wherein the proline-tolerant tripeptidase A peptidyl peptidase capable of cleaving a tripeptide from the N-terminus of a peptide having: a proline at P1; and a synthetic amino acid at P1; or (b') at least one that has exopeptidase activity a proline-tolerant tripeptidyl peptidase, wherein the proline-tolerant tripeptidyl peptidase is capable of cleaving a tripeptide from the N-terminus of a peptide having: a proline at the PV; and synthetic amino acid at PV; and (b) recovery of the hydrolyzate. The present invention also relates to a method for producing a hydrolysate comprising the use of an endoprotease, an exotripeptidyl peptidase of the S53 family and an aminopeptidase; relates to a proline-tolerant tripeptidyl peptidase , a composition comprising the proline-tolerant tripeptidyl peptidase, a food and/or feed additive composition, and the use of a hydrolyzate; and the use of various proline-tolerant tripeptidyl peptidases. |
