abstract | The invention provides a soybean protein composite macromolecular microgel-based antioxidant, which is prepared by combining soybean protein isolate which is poor in hydrophilicity but relatively stable with water-soluble macromolecular polyvinyl alcohol, enabling hydroxyl, carboxyl and amino contained in the soybean protein isolate to have hydrogen bond effect with hydroxyl in the polyvinyl alcohol through a heat dispersion and cold shrinkage method to form soybean protein composite macromolecular microgel which is uniformly dispersed in water, and then combining the microgel with a salicylaldehyde cysteine Schiff alkali metal complex to obtain the soybean protein composite macromolecular microgel-based antioxidant. The antioxidant performance research shows that the composite macromolecular microgel-based antioxidant has strong capability of scavenging oxygen free radicals, so that the antioxidant can be used as an SOD enzyme simulant and has good application prospect in the fields of medicines, food processing and packaging materials. |
