abstract The invention relates to the field of food technology processing, in particular to a preparation method of selenium-rich camellia seed oil. The preparation method comprises the steps of degrading the camellia seed meal by utilizing combined strains such as mould, saccharomycetes and lactic acid bacteria, absorbing the combined strains in the process of degrading the camellia seed meal and converting the combined strains into organic selenium by utilizing sodium selenite (inorganic selenium) to be stored, wherein the formed ligand of the organic selenium is tea seed protein or tea seed polysaccharide, the formed organic selenium has good affinity with the camellia seed oil due to the homologous relation, and meanwhile, the organic selenium and the camellia seed oil are fused together by adding emulsifier lecithin, so that the selenium content of the selenium-rich camellia seed oil is kept stable, and the organic selenium content of the selenium-rich camellia seed oil is more than 400 mug/kg.
