After 3 months of ripening, the viable count of the lactobacillus plantarum can reach 1.9 multiplied by 10 9 cfu/ml, the cholesterol removal rate of the cheese can reach 71.22 percent, and the cholesterol removal rate is improved by more than 2 log values compared with the viable count in white-bred cheese without embedding probiotics, and is improved by 27 percent. The cheese prepared by the invention has high probiotic content, and meanwhile, the texture and the mouthfeel are easily accepted by consumers, and the cheese is suitable for being eaten by people with obesity and cholesterol diseases and children, and is also beneficial to preventing diseases such as obesity, cardiovascular and cerebrovascular diseases and the like of common people.
