abstract The invention relates to olive oil and a production method thereof. The olive oil comprises, by weight, 90-95% of olive oil, 3-8% of corn oil, 1-2% of a phosphate and 0.5-1% of vitamin B. The production method comprises taking clean and dry olives, crushing the olives to obtain particles, adding an edible vegetable oil extraction solvent into the particles, carrying out immersion extraction, collecting the extract, evaporating the extract, collecting the extraction solvent so that crude oil is obtained, carrying out deacidification treatment on the crude oil, carrying out decolorization treatment, carrying out vacuum odor-removal treatment to obtain olive oil for next use, and mixing the olive oil prepared according to the above formula, corn oil, phosphate and vitamin B by a stepwise mixing method comprising taking a small amount of the olive oil, fully dissolving and mixing the phosphate and vitamin B through the olive oil and mixing the mixture and a desired amount of the olive oil to obtain the olive oil product.
