abstract The invention discloses a method for extracting gamma-aminobutyric acid from mulberry leaves. The method comprises the following five process steps: withering; anaerobic treatment; extraction; concentration; and drying. The method is characterized in that a part of moisture in fresh mulberry leaves is removed through withering; repeated anaerobic treatment is carried out for enrichment gamma-aminobutyric acid; deionized water is used for solvent extraction of soluble substances in the mulberry leaves so as to obtain extract; the extract is concentrated so as to obtain a concentrate; and the concentrate is subjected to refrigeration, sublimation and drying so as to obtain gamma-aminobutyric acid. The method provided by the invention has the characteristics of simple process steps and high extraction rate and high purity of gamma-aminobutyric acid. The gamma-aminobutyric acid obtained in the invention is capable of adjusting blood pressure and heart rate, nourishing nerve cells, promoting mental tranquilization and blood circulation in the brain, improving cerebral vitality, lowering blood pressure, enhancing liver functions, promoting alcohol metabolism, eliminating odor, etc.
