The invention discloses cherokee rose fruit cake with rich nutrition and a preparation method thereof. The cake is prepared from the following raw materials in parts by weight: 20-30 parts of cherokee rose fruits, 1-3 parts of gastrodia elata, 8-15 parts of apples, 5-10 parts of xylitol, 5-10 parts of granulated sugar, 0.1-0.5 part of citric acid and 1-1.5 parts of a composite gelatinizing agent.
