abstract | The invention discloses a glucose isomerase, a gene, a carrier, an engineering bacteria and its application in catalyzing D-glucose isomerization to prepare D-fructose. The amino acid sequence of the glucose isomerase is as shown in SEQ ID NO.1 shown. The present invention provides a novel high temperature resistant glucose isomerase. The glucose isomerase described in the present invention has high enzymatic activity (2.42U/mg) and excellent thermal stability. Adding 20 mM manganese salts at 85°C for 48 hours, it still maintains more than 80% of the initial enzymatic activity. Industrial application potential of biocatalytic production of high fructose syrup. |
