The invention discloses a tartary buckwheat sweating preparing process which comprises the following steps: (1) cleaning; (2) washing; (3) sweating: stacking the dried tartary buckwheat powder in a closed manner at the temperature of 20-30 DEG C for 24-72 hours, wherein the spreading thickness of the tartary buckwheat powder is 0.1-0.3m; (4) baking. The content of flavonoids in the tartary buckwheat processed through the process is up to 64.6mg/g, the free radical scavenging rate is 88.9%, and the tartary buckwheat processed through the process has a better effect of regulating the symptoms of hypertension, hyperlipidemia and diabetes. |
