abstract | [ problem ] to provide a method for producing a powder containing anhydrous crystals of ascorbic acid 2-glucoside, which can produce a powder that is significantly less prone to consolidation even when the yield of ascorbic acid 2-glucoside is less than 35% by mass. [ MEANS FOR solving PROBLEMS ] there is provided a process comprising the steps of allowing CGTase to act on a solution containing L-ascorbic acid and any of liquefied starch and dextrin, and then allowing glucoamylase to act thereon to obtain a solution having an ascorbic acid 2-glucoside production rate of 27% by mass or more; purifying the obtained solution to make the content of the ascorbic acid 2-glucoside exceed 86 mass percent; a step of precipitating anhydrous crystals of ascorbic acid 2-glucoside by a controlled cooling method or a pseudo-controlled cooling method; collecting precipitated anhydrous crystals of ascorbic acid 2-glucoside, and aging and drying the crystals to obtain a powder containing the anhydrous crystals of ascorbic acid 2-glucoside. |
