abstract | The invention discloses a buckwheat protein concentrate with low phenol and trypsin inhibitor and a preparation method thereof. The buckwheat protein concentrate has a purity of 65-85%, a total polyphenol mass content of less than 0.45%, is remarkably lower than that of buckwheat protein prepared by a common alkali-soluble acid-precipitation method, and has excellent characteristics of low trypsin inhibitor, pure white color, and good solubility and digestibility. The preparation method comprises the following steps: extracting the tartary buckwheat husk powder serving as a raw material by adopting a salt solution; centrifuging, collecting supernatant, and adsorbing with macroporous resin; and then the buckwheat protein concentrate with low phenol and low trypsin inhibitor can be obtained by ultrafiltration and diafiltration technology or dialysis and freeze drying. The invention has simple and feasible process flow, no toxicity and no harm, practically practices the production requirements of the new era of environmental protection and sustainable development, and the invented protein product can be applied to a plurality of fields such as special crowd special food, nutritional health care products and the like. |
