abstract | The present invention relates to a method for forming a confectionery product and a confectionery product forming apparatus. The method comprises the following steps: preforming the confectionery mass including passing the confectionery mass through a pair of preforming rollers of a preforming machine and scoring the confectionery mass at a plurality of locations along a line substantially parallel to the direction of travel of the confectionery mass to at least partially establish at least one dimension of a final shape of the plurality of confectionery products formed from the confectionery mass; passing the mass of confectionery material through a pair of paired rollers; urging the mass away from the rollers in a manner that reduces adhesion between the segments of the mass and the rollers by providing shape-defining pockets on the rollers, the shape-defining pockets having at least one dimension slightly larger than a corresponding dimension of the product shape; and mechanically impacting the confectionery product that has exited the roller to smooth out additional confectionery material due to the slightly larger size, wherein the preformer is capable of compressing the plurality of confectionery products in a direction transverse or oblique to the feeding direction. |
