abstract The invention discloses a carboxymethyllysine eliminating agent and its application. The eliminating agent is a quinone substance formed by oxidation of polyphenols containing catechol or pyrogallol structural units. The application of the eliminating agent in reducing the content of carboxymethyllysine in a food system. The quinones of the present invention have a stronger ability to eliminate AGEs in food systems with neutral or alkaline pH, and adding them after CML is generated in the food system or when CML is not generated can effectively reduce the CML level of the system.
