abstract The invention relates to a series of saffron pigment compounds and their related pharmacological applications in preventing and treating Alzheimer's disease. Using gardenia jasminoides as raw material, a series of saffron pigment compounds were obtained through various separation methods, and screened by in vitro cell experiments to protect against oxidative damage caused by hydrogen peroxide (H 2 O 2 ) and excitatory effects caused by L-glutamic acid. The results show that these saffron pigment compounds have a good effect on protecting cells from damage caused by H 2 O 2 and L-glutamic acid. Due to oxidative stress, the significant increase of excitatory amino acids is the main cause of Alzheimer's disease. The important factors of neurological damage in Alzheimer's disease, so these compounds have a good effect on preventing and treating Alzheimer's disease and have broad prospects for development and utilization.
