abstract The invention discloses a making process for a liquor-marinated Chinese chestnut. The making process comprises the following steps: material selection: selecting Chinese chestnuts with uniform particle sizes and without damage by worms and mildew and decay; airing: airing the selected Chinese chestnuts at normal temperature for 48 h; peeling: removing the peel of the aired Chinese chestnuts so as to obtain Chinese chestnut kernels; sterilization: subjecting the Chinese chestnut kernels to aseptic steam cleaning and sterilization; airing: airing the Chinese chestnut kernels having undergone aseptic steam cleaning and sterilization to drying by gentle breeze; liquor marination: putting the Chinese chestnut kernels in a container and soaking and marinating the Chinese chestnut kernels with liquor with alcohol content of more than 40% for 50 min, then adding white sugar, honey and mature vinegar in a weight ratio of 3: 2: 2 and continuing liquor marination for one week; hermetic storage: hermetically storing the Chinese chestnut kernels for 10 d after liquor marination; and packaging: carrying out bagging and vacuum packaging after hermetic storage for 10 d. The making process provides a novel approach for deep processing of Chinese chestnuts; and the liquor-marinated Chinese chestnut processed by using the making process has a golden color and sweet and moist taste, totally retains original components in the Chinese chestnut kernels and has prolonged shelf life.
