abstract The invention relates to a crow tea production process which mainly comprises the processes of fresh leaf sorting, water removal, secondary rolling, aroma production, shaping and the like. The process of water removal comprises: operating by utilizing waste heat generated after water removal of a water removing machine, properly feeding tea at a temperature of 100 to 1,100 DEG C, rapidly blowing and air-drying after discharging the tea out of the machine, then drying under a great air volume by using a drying machine, and at a temperature of 130 to 1,500 DEG C, and stirring while drying; the drying process is carried out in a non-oxygen or low-oxygen environment; the tea is shaped on a double-pan twisted hair machine at a temperature of 75 to 85 DEG C, wherein 3kg of tea is added into each pan. Crow tea obtained by the crow tea production process disclosed by the invention is curled in shape like conch, bright green in color and round and tight in particle, slightly reveals pekoe, and is pure in aroma, fresh and heavy in taste, is clear in liquor color and complete in infused leaf.
