abstract The invention discloses a preparation method of full lotus root starch with high dietary fibers. The preparation method comprises the following steps: A, cleaning lotus roots: removing sludge on the lotus roots, and cleaning the lotus roots without the sludge; B, removing node heads and cutting the lotus roots without node heads into slices: removing node heads of the lotus roots, scraping off cuticle, and cutting the lotus roots without the node heads or the cuticle into lotus root slices; C, performing corrosion resistance and color protection: putting the obtained lotus root slices into an antiseptic color protecting solution, and soaking the obtained lotus root slices in the antiseptic color protecting solution which is a chlorine dioxide solution activated by citric acid; D, rinsing the soaked lotus root slices, and processing the rinsed lotus root slices with hot water: rinsing the obtained lotus root slices with running water, and processing the rinsed lotus root slices with hot water so as to obtain cured lotus root slices; E, drying the cured lotus root slices and crushing the dried lotus root slices: spreading the obtained lotus root slices on a tray, placing the lotus root slices in a tunnel type baking machine, drying the lotus root slices, and performing shearing type crushing on the dried lotus root slices with a tiny grinder so as to obtain lotus root starch; and F, classifying the lotus root starch: screening the obtained full lotus root starch, and packaging the sieved full lotus root starch. According to the preparation method disclosed by the invention, the production technology of the full lotus root starch is simplified, the production cost during processing the full lotus root starch is reduced, and the good appearance of products and the full-bodied flavor of the lotus roots are guaranteed.
