abstract The present invention provides a simple method for easily determining an optimal capsicum harvest time, and the yield and quality of the capsicum achieve optimum when the capsicum fruit turns from green to red. The method is characterized in that: when the capsicum fruit turns from green to red, contents of vitamin C and capsaicin, which are the most important quality of capsicum, get into a stationary phase and almost reach the maximum, the single capsicum fruit is in a phase of maximal weight, and thus the capsicum yield is highest when the capsicum fruit turns from green to red and economic efficiency maximization can be realized by picking up capsicums during the period.
