A protein substance for use as a substitute for cheese is proposed, which can thus be obtained (a) dehydrating fermented, sour or acidified milk or corresponding milk products, (b) adding spices and/or pigments and optionally other food additives to the dried mass thus obtained, and (c) expanding the mixture thus obtained in water or steam. |
