The invention discloses an enzymatic method for preparing rebaudioside M. The method uses tomato UDP-glycosyltransferase and potato sucrose synthase to produce rebaudioside M with rebaudioside A and sucrose as raw materials. The method of the present invention first utilizes genetic engineering technology to obtain high-yielding recombinant strains of UDP-glucosyltransferase and sucrose synthase, and then collects the crude product of the biological enzyme to directly carry out the catalytic reaction, without adding UDP or UDP-glucose in the reaction system, using Rebaudi Glycoside A and sucrose are used as raw materials, sucrose synthase catalyzes the efficient cycle of UDP-glucose, and through the action of tomato UDP-glucosyltransferase, rebaudioside A is catalyzed to generate rebaudioside M. Compared with the existing rebaudioside M preparation method, the method has short process steps and low cost, and has important application value and good economy. |
