abstract | The invention discloses a production technique of Chinese wolfberry fermented wine, which comprises the following steps: pressing and juicing Chinese wolfberry while adding 90*10<-6>vol% of pectinase, carrying out primary fermentation at 20-22 DEG C for 5-7 days, fermenting at 15-20 DEG C for 30 days, pouring into a tank, separating, pumping the supernate into an aging tank, storing at room temperature for 3-6 months, adding gelatin and bentonite in a ratio of 1:10 into the clear wine, standing for 10-15 days, and carrying out rough filtration with diatomite; and carrying out cold treatment at 5-6 DEG C for 5-7 days, filtering, and sterilizing. The fermented wine is fermented from the pressed fresh Chinese wolfberry juice, so that most nutrients in the Chinese wolfberry are dissolved in the wine. The production technique is reasonable; and the prepared Chinese wolfberry wine has the peculiar flavor of Chinese wolfberry, has the advantages of thick mouthfeel and clear wine body, and has higher nutritive value and favorable health-care function. |
