The invention provides an anti-microbials derivative of liquid smoke, wherein (i) the anti-microbials derivative of liquid smoke contains carbonyl of at least 10% weight per unit volume (w/v), titratable acidity in a concentration of 0 to about 6% weight per unit volume (w/v), phenol in a concentration of less than about 0.5% weight per unit volume (w/v), and water in a concentration of less than about 97% weight per unit volume (w/v); (ii) the derivative of liquid smoke has a pH of about 4.5 to about 6.5; (iii) when the derivative of liquid smoke is used treat food, a smoke flavor is not given to the food; and (iv) when the derivative of liquid smoke is used to treat food, growth of microorganisms of the food is inhibited, the microorganisms being selected from the group consisting of a strain of Streptococcus, Shigella, Hafnia, Enterobacter, Serratia, Staphylococcus, Pseudomonas, Citrobacter, Klebsiella, Escherichia coli, Listeria, Salmonella, Saccharomyces and Aspergillus. |
