abstract The invention relates to a Su chicken making method. The Su chicken making method comprises pickling and air-drying; and the method comprises the following steps: A) pickling: by taking each chicken as unit, using 1000g of water, adding 31g of common salt, 6g of sugar, 2g of monosodium glutamate and 10ml of cooking wine in per 500g of water, and using one spice pack in per 2500g of water for matching, wherein one spice pack comprises 3g of vanilla beans, 3g of laurel, 6g of tsaoko amomum fruits, 18g of Chinese cinnamon, 18g of galingale, 1g of pricklyash peel, 2g of dried citrus peel and 4g of star anise; and boiling the water, adding the spice pack and cooking wine, cooking for 30-45min, then adding common salt, sugar and monosodium glutamate, uniformly stirring, and cooling to form a pickling solution; and B) air-drying: starting a device at low air velocity, increasing the temperature to 100 DEG C and setting an air outlet as a large air outlet; and air-drying the pickled chicken at the temperature of 100 DEG C for 10-15min till the surface is dry, rapidly spraying an aroma-increasing solution, continuously air-drying at the temperature of 100 DEG C for 10min after spraying, then increasing the temperature to 130 DEG C, starting large air velocity, setting the air outlet as a small air outlet and air-drying for 30min.
