The process comprises the following steps: soaking Chinese date in a water tank for 5 hours for sufficient expanding; then washing the Chinese date with water for 3 times, and removing rotten Chinese date and Chinese date with insect holes; then soaking the Chinese date in saline water for 10 minutes; pouring the Chinese date into a marmite, and adding 2kg of fermented glutinous rice, 50g of red wine, 10g of rock candy, 15g of white granulated sugar and 5kg of water; heating to boil the fermented glutinous rice in the marmite, stirring with a spoon, stewing with slow fire for 15 minutes, pouring out from the marmite, and cooling; packaging the produced Chinese date in fermented glutinous rice in cans, and packaging 300ml of the Chinese date in fermented glutinous rice in each can. The process is mainly used for producing Chinese date in fermented glutinous rice. |
