abstract | The invention relates to a food in the daily life of the human and in particular relates to preserved eggs and a preparation method thereof. The preparation method of the preserved eggs comprises the following steps: A, adding 20-25g of quick lime into 25-50g of mountain spring water and uniformly stirring to obtain a feed liquid (1); B, mixing the feed liquid (1), 200g of salt and 50-100g of ash powder together and uniformly stirring to obtain a mixture (2); C, uniformly coating 6-7kg of farm eggs with the mixture (2), lightly pressing by using hands to enabling the eggs to be tightly coated with the mixture, and then putting the eggs in a pre-prepared container; and D, sealing the container and storing the container at the environmental temperature of 5-20 DEG C for 30-50 days. The preserved eggs are prepared from the water at the foot of Shennongjia snow mountain, so that the preserved eggs are delicious in taste; the color of the preserved eggs is brighter than that of common preserved eggs; the preserved eggs are relatively delicious and chewy; the ash powder produced by burning straws and woods is used as a raw material for preparing the preserved eggs, so that the waste is well used. |
