abstract | The invention discloses distiller's grain cottonseed meal soluble protein powder and a preparation method thereof. The distiller's grain cottonseed meal soluble protein powder comprises cottonseed meal, distiller's grains, water, ferrous sulfate, calcium hydroxide, alkaline protease and flavourzyme based on a certain ratio. The preparation method comprises the following steps: (1) uniformly mixing the cottonseed meal, the distiller's grains, ferrous sulfate and calcium hydroxide, soaking, fumigating at 121 DEG C under the pressure of 0.14Mpa-0.18Mpa, and detoxifying the cottonseed meal; (2) adding water and grinding the fumigated cottonseed meal and distiller's grains to obtain mixed pulp; (3) adjusting the pH value of the mixed pulp, and adding the alkaline protease for enzymolysis; adjusting the pH value of the mixed pulp, adding the flavourzyme for enzymolysis, and performing enzyme deactivation to obtain enzymatic hydrolysate; and (4) spray-drying the enzymatic hydrolysate under the conditions that the spraying flow is 20-30mL/min, the feeding temperature is 36-41 DEG C and the inlet air temperature is 160-190 DEG C. The distiller's grain cottonseed meal soluble protein powder prepared by adopting the method is easy to digest, good in flavor and high in solubility index. |
