abstract | A method of preparing Chinese wolfberry mature vinegar is disclosed. The Chinese wolfberry mature vinegar comprises the components: 9% of wheat bran, 6% of bran, 4% of bran vinegar, 2% of crushed wolfberry, and the balance being sterile water. The method of preparing Chinese wolfberry mature vinegar comprises: well mixing wheat bran, bran and the crushed Chinese wolfberry, adding water, soaking for half an hour, and steaming for two hours under normal pressure; stewing for one hour and taking the product out]; cooling to 35 DEG C; pouring bran vinegar into the product, fully and uniformly stirring, and adding into a fermentation pool; fermenting for 25 days with thermal insulation under the condition of 30-37 DEG C, then adding 0.6% of salt, compacting the fermented product; aging for 50 days, removing to a spray pool; soaking with sterile water for 30 hours, performing vinegar pouring, sterilization, and precipitation. According to the invention, the total acidity is 9-11 degrees, quality indicators such as specific gravity, concentration, viscosity, soluble solid, non-volatile acid, total sugar, reducing sugar, total ester and amino acid nitrogen conform to the national standard of edible vinegar. |
