abstract The invention discloses a method for extracting dihydromyricetin in vine tea through fermentation, relating to a method for extracting effective components in the vine tea. The method comprises following steps of smashing the vine tea and extracting under reflux, after concentrating the filtrate, standing so as to obtain tea juice, adding saccharose into the tea juice and sterilizing, mixing alcohol-fermentation active dry yeast with saccharose solution, placing in a constant temperature water bath so as to allow the alcohol-fermentation active dry yeast to activate, then inoculating into the sterilized tea juice, putting the inoculated tea juice into a table concentrator for fermenting, concentrating so as to obtain extractum, drying so as to obtain crude dihydromyricetin powder, and recrystallizing so as to obtain pure dihydromyricetin. The method uses a liquid fermentation method for extracting dihydromyricetin in the vine tea, thus consuming nutrient substances like carbohydrate and protein in the vine tea water extracting solution, lowering the viscosity of the concentrated hot water extracting solution, allowing dihydromyricetin to settle down rapidly, effectively using the vine tea resource, and improving the yield of dihydromyricetin.
