abstract | The invention discloses a process for bitterness and astringency removal of Liangping shaddock peels. The process comprises the following steps: (1) selecting and cleaning raw materials, namely removing decayed fruits and fruits infected by diseases and pests, and cleaning selected fruits through clean water; (2) grinding to remove oil, namely grinding the fruits through a peel grinder to remove oil gland on the surface layers of the fruits, and extracting essence oil from an oil-water emulsion; (3) blanching for peeling, namely blanching the entire fruits from which the oil gland is removed and peeling off, wherein pulp is used for making juice layers or squeezing juice; (4) slicing, namely cutting the peels into strips; and (5) removing bitterness and astringency, namely boiling the sliced shaddock peel strips in 1%-3% of boiling salt water for 5min-15min, spin-drying, rinsing the shaddock peel strips through running clean water, spin-drying the shaddock peel strips, soaking the shaddock peel strips in boiling water for 5min-10min, spin-drying the shaddock peel strips, rinsing the shaddock peel strips through running clean water, and spin-drying to obtain the bitterness and astringency removed shaddock peels. The shaddock peel bitterness and astringency removal process disclosed by the invention is simple, and has a bitterness and astringency removal rate of more than 92%; therefore, the prepared preserved fruit is low in sugar content, which is consistent with the healthcare concept of modern people, and the preserved fruit is popular with people. |
