abstract | The invention provides a structural grease containing rich docosahexaenoic acid (DHA). In the structural grease, the DHA in the Sn-1,3 position accounts for 40 wt% above of total fatty acids, and the palmitic acid in the Sn-2 position accounts for 50 wt% above of total palmitic acid. The invention also provides a preparation method of the structural grease. The structural grease contains rich DHA, the DHA in the Sn-1,3 position and palmitic acid in the Sn-2 position can be easily digested and absorbed by the human body, and thus, the structural grease can provide the palmitic acid in the Sn-2 position and supplement the DHA at the same time, conforms to the humanization direction of fat, and can be used in infant formula foods and other foods or health products in need of supplementing DHA. |
