abstract | The invention discloses a method for producing mushroom sauce, and relates to a method for producing sauce. The method comprises the following steps: concentrating a pre-boiled mushroom solution, inspecting and accepting soybeans, wheat flour, wheat bran and bacteria according to requirements of sensory indexes, physicochemical indexes and hygienic indexes on raw materials according to purchase standards, removing impurities of the soybeans and rejecting soybeans with molds and colors, soaking the obtained soybean, boiling the soaked soybean in a rotating boiling pot, cooling to 55-60 DEG C, mixing the cooled soybean into flour and yeast so as to enable the flour and the yeast to be uniformly adhered to the surfaces of the soybeans so as to obtain yeast materials, feeding the yeast materials into a yeast chamber, putting the yeast materials fed into the yeast chamber onto a bamboo flat basket, flatly spreading the yeast materials, putting the spread yeast materials on a wood shelf in the yeast chamber to be cultured, pouring the yeasted yeast materials into a shining vat, adding a concentrated mushroom salt solution, mixing, subsequently covering a bamboo hat, shining in sun, sucking out the sauce in the shining vat into a settling pond, continuously precipitating and shining in sun for more than one month, sterilizing, homogenizing with high pressure, cooling, filling and packaging so as to obtain a finished product. |
