abstract The invention discloses a meal replacement milk beverage and a preparation method thereof. The meal replacement milk beverage comprises the following raw materials in percentage by mass: 35%-70% of raw material milk, 0.03%-0.08% of a thickener, 0.08%-0.15% of an emulsifier, 0.5%-2% of chia seeds, 0.5%-3% of oat grains, 0.2%-1% of highland barley powder, 0%-7% of a sweetener, 0%-2% of honey and the balance of water. The preparation method comprises the following steps: S1, preheating the raw material milk to 75-80 DEG C, uniformly mixing the raw material milk with the thickener, the emulsifier, the sweetener and the highland barley powder, cooling, and homogenizing to obtain a premix; S2, heating the oat grains in hot water for 18-22 minutes, adding the chia seeds, and heating in the hot water for 8-12 minutes to obtain a grain mixture; S3, uniformly mixing the grain mixture, the honey and the premix, fixing the volume, standardizing, and performing immersion type ultrahigh-temperature instant sterilization. The meal replacement milk beverage is good in flavor, color and mouth feel and excellent in stability.
