abstract | The invention discloses a production method of an instant soft snakehead can, wherein a deodorization process is added in a conventional production method, the deodorization process is specifically as follows: preparing eight deodorization liquid combinations which are as follows in percentage by mass: 1% of citric acid and 0.2% of calcium chloride, 1% of citric acid and 0.2% of sodium chloride, 1% of glacial acetic acid and 0.2% of calcium chloride, 1% of glacial acetic acid and 0.2% of sodium chloride, 0.5% of sodium chloride and 0.3% of sodium bicarbonate, 0.3% of calcium chloride and 0.5% of bicarbonate, ethanol and 0.3% of ginger powder, and 0.5ml white vinegar, combing optional two deodorization liquids, adding the combined deodorization liquids according to the mass ratio of the fish to combined deodorization liquid being 2:1, deodorizing for 3-4h, turning over and mixing frequently, keeping the deodorization temperature to be about 15 DEGC, after the deodorization liquid fully penetrates and deodorizes, cleaning the deodorization liquid and dewatering. According to the production method, the use is convenient, and by adding the deodorization process in the traditional production method of the snakehead can, a good taste standard can be reached. |
