abstract | The invention discloses a modification method of apple meal fiber, which comprises the following steps: 1)extruding and modifying the decoloured apple slag through an extruder to obtain the extruded and modified apple slag; 2) using a water-extraction alcohol-precipitation method for extracting to obtain the apple water-soluble meal fiber; and 3)employing a sulfamic acid-pyridine method for sulphating modification to the obtained water-soluble meal fiber to obtain the modified apple meal fiber. According to the invention, high inoxidizability apple meal fiber can be obtained through extruding and sulphating, the obtained meal fiber has obvious removing effect for hydroxy free radical and superoxide anion free radical, and enlarges the application of the apple meal fiber on food and medicine aspects. The method of the invention has the advantages of simple operation and environment friendliness, and is suitable for industrial large scale production. |
