abstract The invention relates to a preparation method of fibrillin with high gel property, and the preparation method comprises the following steps: 1) preparation of a crude product of fibrillin; 2) removal and separation of a buffer solution; 3) oxidization of the fibrillin; 4) separation and purification. The fibrillin with high gel property, obtained by the preparation method disclosed in the invention, has obviously better gel hardness, elasticity and cohesiveness than the existing fibrillin with high gel property, and is especially applicable to food processing field so as to regulate the texture properties of foods.
