abstract | A water retention method for squids belongs to the field of food processing, and can effectively solve the disadvantages of easy moisture loss and mouthfeel lack of tenderness for a user in ordinary squid preservation. The method is as below: dumping 20 kg of squids in a water pool and neatly placing the squids; adding 100 kg of water in the water pool; compacting the squids with a board and immersing for 8 h; fishing out the immersed squids out of the water pool, and placing the squids in a filter screen to filter out excessive moisture; cleaning the water pool, then dumping the squids with moisture filtered out into the water pool, then adding 13 kg of protease, 0.05 kg of sodium benzoate, 33 kg of sodium ascorbate, 7 kg of isolated protein and 1.5 kg of gelatin into the water pool, then stirring with a wooden stick for 10 min to fully mix the above substances and immersing the squids for 3 days; and fishing out the immersed squids out of the water pool, and filtering out excessive moisture. The method provided by the invention is mainly used for fresh-keeping of squids. |
