abstract The invention provides an egg preservation whey protein self-assembly fiber coating agent and an application method thereof. A whey protein solution with,mass concentration of 2-4% is prepared by using deionized water; the pH value of the solution is adjusted to 1.5-2.5 through 3mol/L hydrochloric acid, the solution is centrifuged for 15-20 min at a rotating speed of 9000r/min and at 4 DEG C, and the supernatant is subjected to suction filtration by a mixed fiber membrane with pore diameter of 0.45 micron; the filtrate is added into an airtight round-bottom flask and is heated in a water bath oscillation manner for 7-9h at 75-85 DEG C and a rotating speed of 300r/min to obtain fibrous protein, and the fibrous protein is freeze-dried or spray-dried to obtain fibrous protein powder. According to the invention, the whey protein is used as the raw material and is treated to form the fibrous protein powder with a certain length. The powder is prepared into 2-4% solution to coat eggs, protective films formed after air drying can effectively block air holes and seal tiny cracks to keep the eggs fresh and prolong the quality guarantee period by three to four times.
