abstract The invention discloses a detection device and detection method for freshness of chicken thigh. The detection method comprises the following steps: three kinds of carrier gas are selected to detect volatile gas produced by the chicken thigh of the just killed chicken, and when the value R of one of the three kinds of the carrier gas is less than 0.9, the concentration of the volatile gas is the most appropriate, so that the accuracy of detection can be ensured; a chicken thigh freshness prediction model is selected. A computer is adopted to calculatethe storage time value t of the chicken thigh by utilizing the chicken thigh freshness predication model; the non-conformity or conformity judgment of freshness of the chicken thigh sample is made. The detection method has the characteristics of accurate, objective and fast detection, excellent economical efficiency, and capability of supplying reliable data support to manufacturing food by using the chicken thigh with the qualified freshness.
