abstract The invention discloses a preparation process for low-temperature cold-pressed carotene-rich peanut oil. The process is characterized by comprising the steps of (1), removing shells and red skins of peanuts, drying the peanuts until the water content reaches 5-8%, and crushing the peanuts; weighing carrots with the weight equivalent to 20-25% of that of the peanuts, and washing the carrots clean; (2), sending crushed peanut kernels into an oil press to extract oil, so that the virgin peanut oil is obtained. According to the process, vinegar grinding, wine grinding and cold pressing technologies are adopted, the advantages of initial pressing are reserved, meanwhile, the oil yield can be improved by the vinegar grinding and the wine grinding, poisonous and harmful substances can be killed, and the quality of the peanut oil is improved. The peanut oil is rich in carotene and beneficial to human health.
