abstract | The invention discloses a preparation method of an edible fungus live ferment. The method comprises the following steps: 1, carrying out microwave disinfection processing of edible fungi, cutting under a clean condition to form slices, uniformly mixing, adding white sugar and starch, and inoculating Bacillus subtilis, lactic acid bacteria and acetic acid bacteria for carrying out primary fermentation to prepare a stock solution; and 2, secondary fermentation: inoculating bifidobacteria and yeast to the edible fungus ferment stock solution, carrying out combined fermentation for 40-50d, filtering, and carrying out sealed preservation ageing of a semi-finished product obtained after filtration for 3m to obtain the edible fungus live ferment. The method has the advantages of effective accumulation of the functional clean components of edible fungi, improvement of the cleanliness of various ferments and the number of live fungi, and effective improvement of all healthcare efficacies and the high added vale effects of the ferment. |
