abstract The invention discloses a mushroom zymolyte and application thereof to the preparation of a mushroom essence. The mushroom zymolyte is prepared by using mushroom as a raw material through enzymolysis of a cellulase and a papain, wherein the weight ratio of the cellulase to the papain is (0.5-1):(0.3-0.5), the enzymolysis temperature is 45-55 DEG C, and the enzymolysis time is 3-5h. The mushroom essence prepared by using the mushroom zymolyte as a precursor through a Maillard reaction is strong in naturality, good in naturalness, full in flavor, refresh and delicious in taste and remarkable in wood scent, faint scent and fresh scent of the mushroom.
