abstract The invention discloses a method for reducing fungaltoxin of rice. The method comprises the following steps of: (1) elutriating material rice, namely elutriating power impurities adhered to the surface of the rice by clean water; (2) adding water to soak the rice for no less than 0.5cm; (3) warming or heating to 20-55 DEG C; (4) adding edible vinegar which is equivalent to 0.1-1.5% of volume of water; (5) adding edible glucose or white granulated sugar which is equivalent to 0.1-10.0% of mass of water; (6) adding glucose oxidase according to the ratio of 1-10 IU/L of water; (7) stewing for 5-30 minutes after performing uniform agitating; (8) draining off the rice soaked in the step (7), and then cleaning for the second time by the clean water to cook. The method is simple and feasible, low in cost, and short in time; the removal rate of the fungaltoxin in the rice is 40-86%.
