abstract | The invention provides a production method of molasses alcohol, which comprises the following steps that (1) molasses is diluted into a molasses solution with the brix of 40-degree BX-45-degree BX by water; the molasses solution is uniformly mixed with bagasse, nutritive salt and an assistant I; pH is adjusted to be 3.8-4.0; a fermentation medium is obtained; the fermentation medium is divided into a first fermentation medium and a second fermentation medium; (2) the first fermentation medium is diluted by water until the brix is 20-degree BX-25-degree BX; pH is adjusted to be 3.4-3.6; a yeast wine medium is obtained; (3) saccharomyces cerevisiae is added to the yeast wine medium, uniformly mixed and then cultivated; yeast wine mash is obtained; (4) the yeast wine mash is uniformly mixed with the second fermentation medium; an enzyme preparation composition and an assistant II are added, uniformly mixed and then cultivated; fermented mash is obtained; and (5) the fermented mash is subjected to distillation treatment; and alcohol is obtained. The production method of molasses alcohol can increase the alcohol yield, and can allow the bagasse to be applied reasonably. |
