abstract | The invention discloses an ACE inhibitory peptide and a preparation method thereof, and provides a casein hydrolysate which has an anti-hypertension effect and is rich in the ACE inhibitory peptide, the ACE inhibitory peptide with an anti-hypertension effect, and a preparation method of the ACE inhibitory peptide. The casein hydrolysate rich in the ACE inhibitory peptide contains two peptide fragments with ACE inhibitory activities; and the amino acid sequences of the two peptide fragments with ACE inhibitory activities are respectively YS and YQKFPQYLQY. The amino acid sequence of the ACE inhibitory peptide is YS or YQKFPQYLQY. The ACE inhibitory peptide or the casein hydrolysate rich in the ACE inhibitory peptide is sufficiently mixed with milk powder matrixes to prepare anti-hypertension milk powder; or the ACE inhibitory peptide or the casein hydrolysate rich in the ACE inhibitory peptide is mixed with fresh milk to obtain a mixture, and lactic acid bacteria is inoculated in the mixture to obtain yoghourt with an anti-hypertension effect. The dairy product has a remarkable anti-hypertension effect, has no influence on the normal blood pressure, is safe to eat, and is suitable for being ate by the hypertension groups. |
