abstract The invention relates to an active ingredient contained ginseng tablet and a production method thereof and belongs to the field of food processing technologies. The method comprises the following steps: cleaning suncured ginseng roots of dried planting and stems and leaves thereof so as to remove impurities; spraying just enough thermophilic purified water to wet and soften the ginseng, then performing rolling, cutting, freezing, thawing, granularity adjustment, segmental temperature-control maturity and the like, so as to generate active enzymes indispensable for human health; leaching functional active ingredients; and drying, crushing, redeploying and tabletting residues obtained through vacuum filtration so as to prepare tablet type ginseng healthy foods richly containing the active ingredients. The food product has favorable sense quality and a special nutrition function. According to the invention, the ginseng application range is widened; the food product not only can be used directly, but also can be used for producing interstitial substances for relevant functional foods. Moreover, the production process and condition are mild, and the purposes of zero contamination, and no off scum, waste steam and poisonous substances are achieved; and the food is safe to eat as no chemical reagent is used.
